There is no cooking required for the rice paper rolls.Ingredients
- 10-12 rice paper wrappers
- 1 cup vermicelli noodles
- 1 cucumber, cut into thin strips
- 1 carrot, grated or cut into thin strips
- 1 red bell pepper, cut into thin strips
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh basil leaves
- 1/2 cup cooked and shredded chicken or tofu
- 1/4 cup hoisin sauce
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 clove garlic, minced
- 1/4 teaspoon red pepper flakes

Method
- Soak the vermicelli noodles in boiling water for 3-4 minutes, then drain and set aside.
- Prepare all of the vegetables and herbs, and set aside.
- Whisk together the hoisin sauce, peanut butter, soy sauce, honey, rice vinegar, garlic, and red pepper flakes in a bowl to make the dipping sauce.
- Fill a bowl with warm water and dip a rice paper wrapper into the water for 10-15 seconds, or until softened.
- Remove the rice paper wrapper from the water and place it on a cutting board.
- Place a small amount of vermicelli noodles, vegetables, herbs, and chicken or tofu in the center of the wrapper.
- Roll the wrapper tightly around the filling, tucking in the sides as you go.
- Repeat with the remaining ingredients.
- Serve the rice paper rolls with the dipping sauce on the side.
Notes
Rice paper rolls can be made ahead of time and stored in the fridge for up to 2 days. However, they are best served fresh. If you are using chicken, make sure it is cooked thoroughly before adding it to the rolls. To make the rolls vegan, omit the chicken and use tofu or tempeh instead.Nutrition Info
