Method

- Let the rice cool for a few minutes until it is cool enough to handle.
- Wet your hands with water and scoop about 1/4 cup of rice into one hand. Make a small indentation in the center of the rice with your thumb.
- Place a small amount of filling (such as pickled plums or salmon) into the indentation.
- Cover the filling with another 1/4 cup of rice and shape the rice into a triangle or ball shape. Use your hands to press the rice together firmly.
- If using nori sheets, cut them into thin strips and wrap them around the rice balls.
- Wrap the rice balls with plastic wrap to keep them from drying out. Serve at room temperature or chilled.
