- 1 (5-6 pound) bone-in pork shoulder

Method
1. In a blender or food processor, combine orange juice, lime juice, olive oil, garlic, oregano, cumin, salt, and pepper. Blend until smooth. 2. Place the pork shoulder in a large baking dish or roasting pan. Pour the marinade over the pork, making sure to coat it evenly. Cover the dish with aluminum foil and refrigerate for at least 8 hours or overnight. 3. Preheat the oven to 325°F. 4. Remove the pork shoulder from the marinade and place it in the roasting pan. Discard the remaining marinade. 5. Scatter the sliced onions around the pork shoulder and pour the chicken stock into the bottom of the pan. 6. Cover the roasting pan with aluminum foil and place it in the oven. Roast for 4-5 hours, or until the pork is tender and falling off the bone. 7. Remove the foil from the pan and increase the oven temperature to 450°F. Roast the pork for an additional 15-20 minutes, or until the skin is crispy and golden brown. 8.
