- 1 can diced tomatoes, undrained

- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon salt

- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- 1 avocado, sliced

Method
- Heat the Dutch oven or large pot over medium-high heat.

- Add the rice, black beans, diced tomatoes, chicken broth, chili powder, cumin, salt, and black pepper to the pot. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot. Simmer for 20-25 minutes or until the rice is tender and the liquid has been absorbed.
- Stir in the cooked chicken and cilantro.
- Serve hot with lime wedges and sliced avocado on top.
