Method
Follow these steps to make lemon rice:- Wash the rice thoroughly and soak it in water for 30 minutes.
- Drain the water from the rice and add it to a pressure cooker along with 2 cups of water.
- Cook the rice until it is fully cooked.
- Once the rice is cooked, spread it on a plate and let it cool.
- Heat oil in a pan and add mustard seeds, cumin seeds, urad dal, chana dal, dried red chilies, and curry leaves.
- Saute the ingredients until they turn golden brown.
- Add asafoetida, peanuts, and turmeric powder to the pan and mix well.
- Add the cooked rice to the pan and mix well.
- Add salt and lemon juice to the rice and mix well.
- Cover the pan with a lid and let it cook on low flame for 5 minutes.
- Turn off the flame and let the rice rest for 5 minutes.
- Transfer the rice to a serving bowl and serve hot.

- You can add more or less lemon juice as per your taste preference.
