Ingredients

  • 2 cups of cooked rice

  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of vegetable oil
  • 2 cloves of minced garlic
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 eggs

Equipment

  • Wok or large skillet
  • Cutting board
  • Knife
  • Bowl
  • Spatula

Method

  1. Heat the vegetable oil in a wok or large skillet over medium-high heat.
  2. Add the minced garlic and stir-fry for 30 seconds.
  3. Add the diced onions and stir-fry for 1-2 minutes until they are translucent.
  4. Add the diced carrots and stir-fry for 1-2 minutes.
  5. Add the diced bell peppers and stir-fry for 1-2 minutes.
  6. Add the diced mushrooms and stir-fry for 1-2 minutes.
  7. If using meat, add it now and stir-fry until cooked through.
  8. Add the cooked rice to the wok or skillet and stir-fry until everything is well combined.
  9. Add the soy sauce, sesame oil, salt, and black pepper to the wok or skillet and stir-fry for 1-2 minutes until everything is well combined.
  10. Move the fried rice to one side of the wok or skillet and crack two eggs into the empty side. Scramble the eggs until cooked through.
  11. Stir the scrambled eggs into the fried rice.
  12. Serve immediately.

Notes

  • This recipe is very flexible, so feel free to add or remove any ingredients to your liking.
  • If you don't have leftover rice, you can cook fresh rice and let it cool before using it in this recipe.
  • If you want to make this dish vegetarian, simply omit the meat and use vegetable broth instead of chicken broth.
