Description

Jamaican rice and beans, also known as "rice and peas," is a classic Caribbean dish that is both flavorful and filling. This dish is a staple in Jamaican cuisine and is often served with jerk chicken or other Caribbean dishes. The dish is made using kidney beans, coconut milk, and aromatic spices that infuse the rice with a rich, savory flavor.

Prep Time

The prep time for this dish is approximately 15 minutes.

Cook Time

The cook time for this dish is approximately 30-40 minutes.

Ingredients

  • 2 cups of basmati rice
  • 1 can of kidney beans
  • 1 can of coconut milk
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 2 sprigs of fresh thyme
  • 1 scotch bonnet pepper, deseeded and finely chopped
  • 1 teaspoon of allspice
  • Salt and pepper to taste
  • 3 cups of water

Equipment

  • Large pot with lid
  • Wooden spoon
  • Cutting board
  • Sharp knife

Method

  1. Begin by rinsing the rice in cold water until the water runs clear. Drain the rice and set it aside.
  2. In a large pot, heat 1 tablespoon of oil over medium-high heat. Add the onions and garlic and sauté for 2-3 minutes until they start to soften.
  3. Add the rice to the pot and stir to coat it in the oil and onions. Cook for 2-3 minutes until the rice starts to toast slightly.
  4. Add the kidney beans, coconut milk, thyme, scotch bonnet pepper, allspice, salt, and pepper to the pot. Stir everything together until well combined.
  5. Add 3 cups of water to the pot and stir everything together again.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
  7. Simmer the rice for 20-25 minutes or until the liquid has been absorbed and the rice is tender.
  8. Once the rice is cooked, remove the pot from the heat and let it sit for 5 minutes before fluffing the rice with a fork.
  9. Serve the rice and beans hot and enjoy!

Notes

  • For a spicier dish, leave the seeds in the scotch bonnet pepper.
  • If you don't have kidney beans, you can use black beans instead.
  • Make sure to use full-fat coconut milk for the best flavor and texture.

Recipe Tips

  • Make sure to rinse the rice until the water runs clear to remove excess starch and prevent the rice from becoming sticky.
  • Use a sharp knife to finely chop the scotch bonnet pepper to avoid accidentally touching your eyes or face with the pepper oil.
  • If the rice is still undercooked after the liquid has been absorbed, add a splash of water and continue to cook until the rice is tender.
