- 1 lb of shrimp, peeled and deveined
- 1 small onion, chopped
- 2 cloves of garlic, minced
- 1 cup of frozen peas and carrots
- 2 eggs, beaten
- 3 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 2 tablespoons of vegetable oil
- Salt and pepper to taste

Method
- Heat the vegetable oil in the wok or skillet over medium-high heat.
- Add the onion and garlic and stir-fry for 1-2 minutes until fragrant.
- Add the shrimp and stir-fry for 2-3 minutes until cooked through.
- Push the shrimp to one side of the wok or skillet and add the beaten eggs to the other side.
- Scramble the eggs until they are fully cooked, then mix them with the shrimp.
- Add the frozen peas and carrots and stir-fry for 1-2 minutes until heated through.
- Add the cooked white rice to the wok or skillet and stir-fry for 2-3 minutes until heated through.
- Add the soy sauce and sesame oil and stir-fry for 1-2 minutes until everything is well combined.
- Season with salt and pepper to taste.
- Remove from heat and serve hot.
