Ingredients

  • 1 head of cauliflower

Method

  1. Remove the cauliflower florets from the stem and pulse in a food processor until it's a rice-like consistency.

  4. Add the frozen peas and carrots to the skillet and cook for another 2-3 minutes until they're heated through.
  5. Push the veggies to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs and then mix with the veggies.
  6. Add the cauliflower "rice" to the skillet and mix everything together.
  7. Stir in the soy sauce and season with salt and pepper to taste.
  8. Cook for another 5-7 minutes until the cauliflower is tender.
  9. Remove from heat and serve hot.
