- 1 head of cauliflower
- 1 tablespoon olive oil
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 2 eggs, beaten
- 3 tablespoons soy sauce
- Salt and pepper to taste

Method
- Remove the cauliflower florets from the stem and pulse in a food processor until it's a rice-like consistency.
- Heat up the olive oil in a large skillet over medium heat.
- Add the diced onion and minced garlic to the skillet and cook for 2-3 minutes until the onion is translucent.
- Add the frozen peas and carrots to the skillet and cook for another 2-3 minutes until they're heated through.
- Push the veggies to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs and then mix with the veggies.
- Add the cauliflower "rice" to the skillet and mix everything together.
- Stir in the soy sauce and season with salt and pepper to taste.
- Cook for another 5-7 minutes until the cauliflower is tender.
- Remove from heat and serve hot.
Notes
