Method

  1. Bring a large pot of salted water to a boil. Add the rice noodles and cook for 3-4 minutes, or until tender. Drain and set aside.
  2. In a wok or large skillet, heat the vegetable oil over medium-high heat. Add the onion and garlic and cook for 2-3 minutes, or until softened.
  3. Add the red bell pepper, broccoli, and snow peas to the wok and cook for 3-4 minutes, or until tender-crisp.
  4. In a small bowl, whisk together the soy sauce, oyster sauce, brown sugar, cornstarch, and water until smooth.
  5. Add the cooked noodles to the wok and pour the sauce over the top. Toss everything together until well coated.
  6. Cook for an additional 2-3 minutes, or until the sauce has thickened and the noodles are heated through.
  7. Season with salt and pepper to taste.
  8. Divide the noodles among plates and serve hot.

Notes

If you want to make this dish vegetarian, you can omit the oyster sauce and use a vegetarian stir-fry sauce instead. You can also add your favorite vegetables, such as carrots, mushrooms, or bok choy.
