- 2 cups long-grain rice
- 1 can diced tomatoes, undrained
- 2 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper, to taste
- Fresh cilantro, chopped (optional)

1. Turn on the Instant Pot and select the sauté function. Add the olive oil and heat until hot. 2. Add the diced onions and cook until translucent, stirring occasionally. 3. Add the minced garlic and diced bell peppers and cook for another 2-3 minutes. 4. Add the long-grain rice, diced tomatoes, chicken broth, oregano, cumin, smoked paprika, cayenne pepper, salt, and pepper. Stir everything together. 5. Close the Instant Pot lid and make sure the valve is set to sealing. Select the manual (pressure cook) function and set the time for 8 minutes on high pressure. 6. Once the cooking time is complete, allow the pressure to release naturally for 10 minutes before doing a quick release of any remaining pressure. 7. Open the Instant Pot lid and fluff the rice with a fork. Taste for seasoning and adjust as needed. 8. Serve hot, garnished with chopped cilantro if desired.Notes
