- 2 tbsp of vegetable oil
- 1 tsp of salt
- 1 tsp of black pepper

Method
- Rinse the rice in cold water until the water runs clear.
- In a large pot, heat the vegetable oil over medium heat.
- Add the diced onion and minced garlic to the pot and sauté until the onion is translucent.
- Add the rice to the pot and stir well so that it is coated in the oil.
- Add the kidney beans to the pot and stir well.
- Add the coconut milk to the pot and stir well.
- Add the sprig of thyme to the pot.
- Add the scotch bonnet pepper to the pot, but do not cut it open (this will add flavor without making the dish too spicy).
- Add the salt and black pepper to the pot and stir well.
- Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
- Simmer the rice for 30-35 minutes, or until the liquid has been absorbed and the rice is tender.
- Remove the scotch bonnet pepper and thyme sprig before serving.
