Ingredients

  • 1 pound red beans, rinsed and drained
  • 1 pound smoked sausage, sliced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 celery stalks, chopped
  • 4 garlic cloves, minced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 6 cups chicken broth
  • Salt and pepper to taste
  • 4 cups cooked white rice

Equipment

  • Dutch oven or large pot
  • Wooden spoon
  • Knife and cutting board
  • Measuring cups and spoons
  • Small bowl
  • Stove
  • Serving bowls

Method

  1. Heat a Dutch oven or large pot over medium-high heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage from the pot and set aside.
  2. Add the chopped onion, green bell pepper, and celery to the pot. Cook until the vegetables are softened, about 5 minutes.
  3. Add the minced garlic, bay leaves, dried thyme, dried oregano, smoked paprika, and cayenne pepper to the pot. Cook for 1-2 minutes or until fragrant.
  4. Add the rinsed and drained red beans to the pot. Pour in the chicken broth and stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 1 hour and 15 minutes or until the beans are tender and creamy.
  6. Remove the bay leaves from the pot. Use a wooden spoon or potato masher to mash some of the beans in the pot. This will help thicken the sauce.
  7. Add the cooked sausage to the pot and stir to combine. Cook for an additional 10-15 minutes or until the sausage is heated through.
  8. Taste the red beans and rice and season with salt and pepper to taste.
  9. Serve the red beans and sausage over a bed of cooked white rice.
