- 2 cups of Chinese sticky rice

- 1 tablespoon of vegetable oil

- 1/4 cup of dried shrimp, soaked in water and drained
- 1/4 cup of dried shiitake mushrooms, soaked in water and sliced
- 1/4 cup of roasted peanuts, chopped

Method
- Place the sticky rice in a large bowl and cover with water. Soak for at least 2 hours.
- In a separate bowl, mix together the soy sauce, oyster sauce, rice wine, sesame oil, vegetable oil, salt, sugar, garlic, ginger, and green onions.
- Add the chicken to the marinade and mix well. Cover and refrigerate for at least 30 minutes.
- Drain the rice in a colander and rinse with cold water.
- Add the rice to a large pot with 2 1/2 cups of water. Bring to a boil, then reduce heat to low and cover with a lid. Cook for 15 minutes.
- In a wok or large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and stir-fry for 5-7 minutes, until cooked through.
- Add the dried shrimp and mushrooms to the wok and stir-fry for 2-3 minutes.
- Add the cooked sticky rice to the wok and stir-fry for 5-7 minutes, until the rice is heated through and slightly crispy.
- Stir in the chopped peanuts and serve hot.
