Ingredients

  • 2 cups of Chinese sticky rice

  • 1 tablespoon of sesame oil

  • 1 inch of ginger, minced
  • 4 green onions, thinly sliced
  • 1/4 cup of dried shrimp, soaked in water and drained
  • 1/4 cup of dried shiitake mushrooms, soaked in water and sliced
  • 1/4 cup of roasted peanuts, chopped

Method

  1. Place the sticky rice in a large bowl and cover with water. Soak for at least 2 hours.
  2. In a separate bowl, mix together the soy sauce, oyster sauce, rice wine, sesame oil, vegetable oil, salt, sugar, garlic, ginger, and green onions.
  3. Add the chicken to the marinade and mix well. Cover and refrigerate for at least 30 minutes.
  4. Drain the rice in a colander and rinse with cold water.
  5. Add the rice to a large pot with 2 1/2 cups of water. Bring to a boil, then reduce heat to low and cover with a lid. Cook for 15 minutes.
  6. In a wok or large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken and stir-fry for 5-7 minutes, until cooked through.
  7. Add the dried shrimp and mushrooms to the wok and stir-fry for 2-3 minutes.
  8. Add the cooked sticky rice to the wok and stir-fry for 5-7 minutes, until the rice is heated through and slightly crispy.
  9. Stir in the chopped peanuts and serve hot.

Notes

For a vegetarian version of this dish, substitute the chicken with tofu or vegetables such as mushrooms, carrots, and peas.
