- 1/4 teaspoon black pepper

Method
- Preheat the oven to 375°F.
- Wash and dry the potatoes. Cut them into 1-inch thick slices.
- In a small bowl, mix together the olive oil, garlic, thyme, rosemary, oregano, salt, and pepper.
- Place the potato slices in a single layer in a large baking dish.
- Brush the herb mixture over the potatoes, making sure to cover each slice.
