Ingredients

Method

  1. Wash the basmati rice thoroughly and soak it in water for 10-15 minutes.
  2. In a medium-sized pot, add 2 cups of water and bring it to a boil.
  3. Once the water starts boiling, add the soaked basmati rice and stir well.
  4. Reduce the heat to low and cover the pot with a lid. Let it cook for 10-15 minutes or until the rice is fully cooked.
  5. In a small bowl, add saffron strands and 1 tablespoon of warm water. Mix well and let it sit for a few minutes.
  6. In a pan, heat ghee over medium heat. Add raisins and cashews and sauté until the cashews turn golden brown.
  7. Add cooked rice to the pan and mix well.
  8. Add sugar, saffron-water mixture, and cardamom powder. Mix well and cook for 2-3 minutes.
  9. Remove from heat and let it cool for a few minutes.
  10. Indian yellow rice is ready to serve.

  • You can adjust the amount of sugar according to your taste.
  • You can also add more or less raisins and cashews as per your preference.
