- 2 cups water

Method
- Wash the basmati rice thoroughly and soak it in water for 10-15 minutes.
- In a medium-sized pot, add 2 cups of water and bring it to a boil.
- Once the water starts boiling, add the soaked basmati rice and stir well.
- Reduce the heat to low and cover the pot with a lid. Let it cook for 10-15 minutes or until the rice is fully cooked.
- In a small bowl, add saffron strands and 1 tablespoon of warm water. Mix well and let it sit for a few minutes.
- In a pan, heat ghee over medium heat. Add raisins and cashews and sauté until the cashews turn golden brown.
- Add cooked rice to the pan and mix well.
- Add sugar, saffron-water mixture, and cardamom powder. Mix well and cook for 2-3 minutes.
- Remove from heat and let it cool for a few minutes.
- Indian yellow rice is ready to serve.
Notes
- Make sure to use good quality saffron for this dish.
- You can adjust the amount of sugar according to your taste.
- You can also add more or less raisins and cashews as per your preference.
