Method

Add the chopped onion, bell pepper, and garlic, and sauté until softened. 4. Add the drained rice to the pot and stir to coat it with the vegetable mixture. 5. Add the reserved mushroom liquid, salt, black pepper, thyme, and bay leaf to the pot. Bring to a boil. 6. Add the soaked mushrooms to the pot and stir to combine. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes or until the rice is cooked and the liquid is absorbed. 7. Remove the bay leaf before serving.
