- 2 lbs of chicken breasts, cut into bite-sized pieces
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tablespoon of curry powder
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of ground turmeric
- 1/2 teaspoon of paprika
- 1/4 teaspoon of cayenne pepper (optional)
- 1 can of diced tomatoes
- 1 can of coconut milk
- 1/4 cup of chicken broth
- 2 cups of cooked rice
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)

1. Season the chicken pieces with salt and pepper. 2. Heat the olive oil in a large skillet or wok over medium-high heat. 3. Add the chicken and cook until browned on all sides, about 5-7 minutes. 4. Remove the chicken from the skillet and set aside. 5. In the same skillet, add the diced onion and cook until translucent, about 2-3 minutes. 6. Add the minced garlic and cook for another minute. 7. Add the curry powder, cumin, coriander, turmeric, paprika, and cayenne pepper (if using) to the skillet and stir until fragrant, about 1-2 minutes. 8. Add the diced tomatoes, coconut milk, and chicken broth to the skillet and stir until combined. 9. Bring the mixture to a simmer and add the chicken back to the skillet. 10. Reduce the heat to low and let the mixture simmer for 20-30 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened. 11. While the chicken is simmering, cook the rice according to the package instructions. 12. Once the chicken is done, remove from heat and let it rest for 5 minutes. 13.
