- 2 cups of white rice
- 1 can of diced tomatoes
- 1 onion, diced
- 1 red bell pepper, diced
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- 2 tablespoons of tomato paste
- 2 teaspoons of chili powder
- 1 teaspoon of cumin
- 2 cups of chicken broth
- Salt and pepper to taste
- 1 cup of salsa
- Chopped fresh cilantro for garnish

Method
- Heat the olive oil in a large skillet over medium heat.
- Add the onion, red bell pepper, and garlic. Cook until the vegetables are soft and fragrant, about 5 minutes.
- Add the rice, chili powder, and cumin. Stir to coat the rice in the spices and cook for 2-3 minutes.
- Add the diced tomatoes, tomato paste, chicken broth, and salt and pepper to taste. Stir to combine.
- Bring the mixture to a boil, then reduce heat to low and cover with a lid. Simmer for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed.
- Remove from heat and stir in the salsa.
- Garnish with chopped cilantro and serve hot.
Notes
