- 1 cup of long-grain white rice
- 1 tablespoon of olive oil
- 1 small onion, chopped
- 2 cloves of garlic, minced
- 1 can of diced tomatoes (14.5 oz)
- 1 cup of chicken or vegetable broth
- 1 teaspoon of cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)

- A medium-sized saucepan with a lid
- A wooden spoon
- A sharp knife
- A cutting board

Method
- Heat the olive oil in a medium-sized saucepan over medium heat.
- Add the chopped onion and sauté for 2-3 minutes, until it becomes translucent.
- Add the minced garlic and sauté for an additional minute.
- Add the rice to the saucepan and stir until it is coated in the oil.
- Add the can of diced tomatoes, chicken or vegetable broth, cumin, chili powder, salt, and pepper to the saucepan and stir until everything is combined.

- Allow the rice to simmer for 20-25 minutes, or until all the liquid has been absorbed and the rice is tender.
- Remove the saucepan from the heat and let it stand, covered, for 5 minutes.

Notes
- If you want to make this recipe vegan, simply use vegetable broth instead of chicken broth.
