Description

Puerto Rican Ropa Vieja is a traditional dish that is popular in Latin American cuisine. The name "ropa vieja" means "old clothes" in Spanish, which refers to the shredded appearance of the beef. This dish consists of tender, shredded beef that is cooked with onions, bell peppers, garlic, and tomatoes. It is typically served with rice and beans, and garnished with fresh cilantro or parsley.

Prep Time

This recipe takes approximately 15 minutes to prepare.

Cook Time

The cooking time for this recipe is approximately 2 hours.

Ingredients

  • 2 pounds flank steak
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 tablespoon tomato paste
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 bay leaves
  • 1/4 cup chopped fresh cilantro or parsley

Equipment

  • Dutch oven or large pot
  • Chef's knife
  • Cutting board
  • Measuring cups and spoons

Method

  1. Preheat the oven to 350 degrees F.
  2. Season the flank steak with salt and pepper.
  3. Heat a Dutch oven or large pot over medium-high heat. Add the flank steak and brown on both sides, about 3 minutes per side. Remove the flank steak from the pot and set aside.
  4. Add the onion, green bell pepper, and red bell pepper to the pot and sauté until softened, about 5 minutes. Add the garlic and sauté for another minute.
  5. Add the diced tomatoes, tomato paste, cumin, oregano, salt, black pepper, and bay leaves to the pot. Stir to combine.
  6. Return the flank steak to the pot and add enough water to cover the meat. Bring to a simmer.
  7. Cover the pot and transfer it to the oven. Cook for 1 1/2 to 2 hours, or until the meat is tender and falls apart easily.
  8. Remove the pot from the oven and discard the bay leaves. Using two forks, shred the meat into bite-sized pieces.
  9. Return the shredded meat to the pot and stir to combine with the sauce.
  10. Garnish with fresh cilantro or parsley and serve with rice and beans.

Notes

This recipe can also be made in a slow cooker. After browning the flank steak and sautéing the vegetables, transfer everything to the slow cooker and cook on low for 8 hours or on high for 4-6 hours.

Recipe Tips

To make this recipe more budget-friendly, you can use cheaper cuts of beef, such as chuck roast or brisket, instead of flank steak. Just be sure to cook the meat until it is tender and falls apart easily. For added flavor, you can also add olives, capers, or raisins to the pot while cooking. These ingredients are commonly used in traditional Puerto Rican Ropa Vieja recipes.
