- 1 cup of brown rice
- 1 can of black beans, rinsed and drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small red onion, diced
- 1 tablespoon of olive oil
- 1 tablespoon of minced garlic
- 1 tablespoon of chili powder
- 1 teaspoon of cumin
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 cup of chopped fresh cilantro
- 1 avocado, sliced
- Lime wedges, for serving

- A large skillet
- A sharp knife

- A measuring cup and spoons
Method
- Rinse the brown rice in a fine-mesh strainer and place it in a large pot with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
- While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the diced red bell pepper, green bell pepper, and red onion. Cook for 5-7 minutes or until the vegetables are soft.
- Add the minced garlic, chili powder, cumin, smoked paprika, salt, and black pepper. Cook for 1-2 minutes or until fragrant.
- Add the rinsed and drained black beans to the skillet and stir to combine.
- Add the cooked brown rice to the skillet and stir to combine with the vegetables and beans.
- Remove the skillet from heat and stir in the chopped fresh cilantro.
- Divide the mixture into bowls and top with sliced avocado and lime wedges.
