For the rice balls, you will need:- 2 cups of Japanese short-grain rice
- 2 1/4 cups of water
- 1/2 teaspoon of salt
- 1-2 sheets of nori seaweed
- Canned tuna or salmon
- Umeboshi (pickled plum)
- Pickled vegetables (such as takuan)
- Grilled or teriyaki chicken
- Seasoned seaweed (such as wakame)
Equipment
- Rice cooker or pot
- Bowl or wooden hangiri
- Plastic wrap
- Sharp knife
Method
- Rinse the rice with cold water until the water runs clear.
- Place the rice in a rice cooker or pot and add the water and salt. Allow the rice to soak for at least 30 minutes.
- Cook the rice according to the instructions on your rice cooker or pot.
- Once the rice is cooked, transfer it to a bowl or wooden hangiri and allow it to cool for a few minutes.
- While the rice is still warm, wet your hands and sprinkle a little salt on your palms. Take a small amount of rice and form it into a ball or triangle shape.
- To make the rice balls with filling, make a small indentation in the center of the rice ball and add your filling. Cover the filling with more rice and shape it into a ball or triangle.
- Wrap the rice ball in a sheet of nori seaweed and use a piece of plastic wrap to hold it in place.
- Repeat the process until all the rice and filling have been used.
- Store the rice balls in an airtight container and refrigerate until ready to eat.
