- 1 cup mixed vegetables (carrots, bell peppers, broccoli, snap peas)
- 2 tbsp. soy sauce
- 1 tbsp. oyster sauce
- 1 tsp. sugar
- 1/4 tsp. black pepper
- 1/4 cup water or chicken broth
Equipment
- Large pot
- Wok or large skillet
- Strainer or colander
Method
- Fill a large pot with water and bring to a boil. Add the flat rice noodles and cook for 3-4 minutes, stirring occasionally to prevent sticking. Drain the noodles in a strainer or colander and rinse with cold water to stop the cooking process.
- Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic and onion and stir-fry for 1-2 minutes until fragrant.
- Add the protein and stir-fry for 2-3 minutes until cooked through.
- Add the mixed vegetables and stir-fry for 2-3 minutes until tender-crisp.
- Add the cooked rice noodles to the wok or skillet and toss to combine with the vegetables and protein.
- In a small bowl, whisk together the soy sauce, oyster sauce, sugar, black pepper, and water or chicken broth. Pour the sauce over the noodles and stir-fry for an additional 1-2 minutes until everything is heated through and the sauce is evenly distributed.
- Remove the wok or skillet from heat and serve the flat rice noodles hot.

Flat rice noodles can be found in most Asian grocery stores or online. If you can't find them, you can substitute with other types of noodles such as udon or soba. You can customize this recipe by using your favorite proteins and vegetables.
