- 2 cups of uncooked long-grain rice
- 4 cups of chicken broth
- 1 tablespoon of olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 2 cups of cooked chicken, shredded
- 1 cup of frozen peas and carrots
- 1 cup of heavy cream
- 1 cup of grated cheddar cheese
- 2 tablespoons of chopped fresh parsley
- Salt and pepper to taste

Method
- Preheat your oven to 375°F.
- In a large saucepan, heat the olive oil over medium-high heat. Add the onion and garlic and sauté until translucent, around 5 minutes.
- Add the uncooked rice and stir until it is coated in the oil and onions. Cook for another 2-3 minutes.
- Pour in the chicken broth and stir to combine. Bring the mixture to a boil, then reduce the heat to low and cover the saucepan. Cook for around 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
- Remove the saucepan from the heat and add in the cooked chicken, frozen peas and carrots, heavy cream, cheddar cheese, parsley, salt, and pepper. Stir until all the ingredients are combined.
- Transfer the mixture to a 9x13 inch baking dish and spread it out evenly.
- Sprinkle additional cheddar cheese on top of the rice mixture.
- Bake the chicken rice bake for around 30 minutes, or until the cheese is melted and golden brown.
- Remove from the oven and let the dish cool for a few minutes before serving.
- Garnish with additional chopped parsley and serve hot.
