Ingredients

  • 2 garlic cloves, minced
  • 1 tbsp cornstarch
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1/2 cup chicken broth
  • Salt and pepper to taste

Method

  1. Fill a large pot with water and bring to a boil. Add the rice noodles and cook for 3-4 minutes or until tender. Drain and set aside.
  2. In a large skillet or wok, heat 1 tablespoon of the vegetable oil over high heat. Add the chicken and stir-fry for 3-4 minutes or until cooked through. Remove from the skillet and set aside.
  3. Add the remaining tablespoon of vegetable oil to the skillet. Add the bell peppers, onion, and garlic, and stir-fry for 2-3 minutes or until the vegetables are tender-crisp.
  4. In a small bowl, whisk together the cornstarch, soy sauce, oyster sauce, brown sugar, and chicken broth. Pour the sauce into the skillet and stir until thickened.
  5. Add the cooked chicken and rice noodles to the skillet and toss until well coated with the sauce. Season with salt and pepper to taste.
  6. Serve hot and enjoy!

Notes

This recipe can easily be customized by adding in your favorite vegetables such as carrots, mushrooms or broccoli. You can also use shrimp or beef instead of chicken.
