- 8 oz rice noodles
- 1 lb boneless skinless chicken breasts, sliced into thin strips
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 garlic cloves, minced
- 1 tbsp cornstarch
- 2 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp brown sugar
- 1/2 cup chicken broth
- Salt and pepper to taste

Method
- Fill a large pot with water and bring to a boil. Add the rice noodles and cook for 3-4 minutes or until tender. Drain and set aside.
- In a large skillet or wok, heat 1 tablespoon of the vegetable oil over high heat. Add the chicken and stir-fry for 3-4 minutes or until cooked through. Remove from the skillet and set aside.
- Add the remaining tablespoon of vegetable oil to the skillet. Add the bell peppers, onion, and garlic, and stir-fry for 2-3 minutes or until the vegetables are tender-crisp.
- In a small bowl, whisk together the cornstarch, soy sauce, oyster sauce, brown sugar, and chicken broth. Pour the sauce into the skillet and stir until thickened.
- Add the cooked chicken and rice noodles to the skillet and toss until well coated with the sauce. Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
